To a simple beach bum like myself, my initial thought is “eeewww.” I’m thinking chocolate but I really had no clue! Truffle Fries are cooked with infused truffle oil and NOT chocolate.
Truffle Fries is a gourmet side dish found in some of the nicer restaurants in Encinitas. Besides chocolate, Chef Dave says, “Truffles are a rare, edible, and delicate type of spore.” In beach bum terms, spores are similar to a mushroom that grows underground.
Truffles “grow mainly in France, Italy, Croatia, and Slovenia; truffles are also collected in the United States in Oregon and Washington. Truffles grow underground among the roots of oak, elm, chestnut, pine, and willow trees where they form a symbiotic relationship with their environment. Duplicating these conditions for growing truffles commercially is not feasible or cost-effective on a wide scale, hence their high price.”
Since learning that Truffle Fries are cooked with infused truffle oil and NOT chocolate, my “eeewww” quickly turned into a YUUUMMM!!! “What a treat!!!”
